Organoleptic properties: with a garnet red colour typical of mature red wines; very intense on the nose, ample, with toasted notes linked to ageing in wood; soft in the mouth, quite tannic, very robust and balanced.
Production soil: medium-textured tending to calcareous.
Processing: the slightly overripe grapes are harvested manually and vinified in small containers where the marc, without the stalk, remains in maceration for about 20 days.
Ageing: malolactic fermentation in barrique for 6 months. Before marketing, the wine rests for about four months in the bottle.
Gastronomic matches: should be consumed with roasts, grilled meats, cured meats and mature cheeses; excellent pairing with Marche ‘tagliata’;
Serving temperature: 16-18 °C
